Green onion pancake, scallion pancake, whatever you want to call it-this simple meal has been a staple of my breakfast routine for as long as I can remember. It’s not your typical stack of pancakes with butter and syrup breakfast, but I guarantee you won’t regret trying this if you haven’t already! Ever experience that moment when you open up your refrigerator and there’s nothing for breakfast? Well, this was my solution to one of those moments. Ta-dah!
- 2 1/2 cups white flour
- 1 cup water
- Vegetable oil
- 1 bunch scallions, chopped
Mix flour and water until dough forms.
Knead dough until smooth and soft.
Cover and place in refrigerator for 30 minutes.
Separate dough into 4 parts.
Roll dough into small ball and flatten out, forming a small circle.
Spread oil onto dough and sprinkle salt and green scallions.
Roll flattened dough into burrito style wrap.
Form a coil with dough, and flatten.
Heat oil over medium-high heat, and fry until golden brown on both sides.
Serve with soy sauce or your choice of dipping sauce.
Add some flour to keep the dough from sticking, but don’t add too much otherwise the pancake will become very dry!
