Flan, where have you been all my life? I don’t particularly like sweet things in general, but I can always make an exception for flan. Flan reminds me of some fond memories-last year me and a couple of friends did a cooking show for a Spanish project and making flan. We also attempted to make horchata, and let’s just say that we’ll not make that ever again, hahahah!
- 2 cups sugar
- 4 eggs
- 1/2 teaspoon vanilla extract
- 2 cups milk
Melt 1 cup of sugar over low heat until golden brown.
Spread caramel (cooked sugar) onto bottom of custard cups/ container.
Mix remaining 1 cup sugar, eggs, vanilla.
Boil milk, add to sugar/egg mix, whisking well.
Strain and ladle mixture into custard cups/container.
Put into water bath and cover.
Bake at 325 °F for 50 minutes. Check after 30 minutes.
This is a crucial part to making flan. The mix will go in the smaller container, and this smaller container will be placed into a larger container filled with water. Make sure not to add too much water to the outside container, otherwise the water will flow out and some of it might even flow into your flan!
