If you’re a fan of Laura Vitale, then you’ve probably heard of this delicious dish before. Unless you’re like me, who has never heard of Laura Vitale or zucchini fritters. Well, up until a few weeks ago, that is. And I must say that Laura Vitale’s videos are extremely addicting…or maybe it’s just that all of the food she makes is so enticing. These fritters are super easy to make, and make a perfect meal that is quick and ready to eat in minutes (with a good serving of vegetables, too)!
- 3 tbsp of flour
- 2 eggs, beaten
- 1/4 tsp of baking powder
- 2 tbs of milk
- 1 tbsp of fresh thyme
- 1 1/3 cup of zucchini, shredded and squeezed of any liquid
- 2 tbsp of olive oil
- salt and pepper, to taste
Mix all ingredients in bowl, except for oil.
Heat oil in skillet over medium heat until hot.
Ladle 2 tbs of batter and fry for 2-3 minutes on each side until golden brown.
Lay fritters out on paper towel to soak up excess oil.

We added some yellow squash for our fritters.
Cut into strips!
Add remaining ingredients…
We added parsley to ours since we didn’t have thyme.
Look at these cute little fritters…they’re just asking to be eaten up right away.

We topped our fritters with the awesome sauce that my friend made, added some boiled edamame on the side, sat down and ate brunch together, and just talked about life like best friends do.
