These past couple of days have been so hot and all I’ve been craving is froyo and acai bowls. Just a couple months left for summer, and I’m SO excited because that means going to the beach and FRUIT!! Strawberry-picking season is coming up, and the hot summer months are perfect for juicy, golden mangoes, cold watermelon, and lots and lots of fruits. I’ve planned a trip to Taiwan for this summer, and it’s seriously fruit heaven over there-lychees, mangoes, dragonfruit, bananas, papayas…TONS of exotic fruit too because of the island weather.
This smoothie bowl is inspired by all things tropical. I was so excited to see a dragonfruit while I was doing some grocery shopping, and decided I would throw it in my morning smoothie bowls. Also, aren’t these flowers just beautiful!? Nearly all of my apartment-mates are in relationships, so we usually have a steady flow of pretty flower bouquets coming from significant others into our kitchen. It’s quite nice.
Ideas for toppings: granola, coconut chips, Goji berries, kiwis, honey. You can never go wrong with toasted coconut chips. They’re the best.
- 1 banana
- 1/2 cup almond milk
- 1 cup frozen berries
- Honey (optional)
- Dragonfruit, cubed
- Banana, sliced
- Combine all smoothie ingredients in blender and blend.
- Top with dragonfruit, sliced bananas, granola.
- Serve immediately.
