Brussels sprouts are just oh so magical. Is it strange that my first time ever having Brussels sprouts was just last year? I know…I must have been missing out on so much throughout my childhood-mothers forcing you to finish your vegetables and eat the gross Brussels sprouts. But honestly, these cute little balls of vegetable are just SO delicious, and when cooked the right way-it’s such a treat I sometimes have to remind myself to leave some on the plate for everyone else.
This recipe incorporates garlic cloves to add a aromatic and mouth-watering (literally salivating as I look at my pictures) garlicky-herb-y taste. Not to mention the touch of caramelized bacon that hits the spot. If you’re like me, you might just want to add a little more of brown sugar than the recipe calls for so you can get the Brussels sprouts caramelized to a crisp!
- 1 lb. of Brussels sprouts, washed, trimmed and halved (or quartered depending on size)
- 3 slices of bacon, chopped
- 6 cloves garlic, peeled and halved
- 1 tsp chopped rosemary
- 2 tbsp olive oil
- 1/2 tbsp brown sugar
- Salt and pepper, to taste
Spread Brussels sprouts evenly in baking pan.
Drizzle Brussels sprouts with oil, coating evenly.
Mix in bacon, garlic, rosemary, and brown sugar, and toss together.
Sprinkle with salt and pepper.
Roast at 400 °F for 20-25 minutes, or until edges are crisp and caramelized.
