This may be the easiest pancake recipe you’ll ever find. As I mentioned before, college cooking is all about how easy and fast you can get (or make) your own food. Since cooking healthier, I’ve actually been looking forward to all my meals too. This pancake recipe is probably one of the best discoveries I’ve made and all this requires is a couple of ingredients!
- 1 ripe banana, mashed
- 2 eggs
- Ground cinnamon
- Vanilla extract
Mash the banana and mix well with eggs.
Sprinkle with cinnamon and add in some vanilla extract.
Add oil to pan and pour batter in.
Flip with spatula when bottom is set.
Serve with your choice of toppings! I used peanut butter, some chocolate chips, fresh fruit, chia seeds, honey and some extra cinnamon. SO DELICIOUS!
You won’t regret it, I promise.
And yes, this really is all you need.
You can choose to exclude the vanilla and cinnamon if you’re feeling even more simple.
MHMMMM…what a great way to start off the day! These pancakes are dripping in goodness…keep in mind that you can choose to modify this however you’d like! You can add butter, syrup, yogurt, chocolate, peanut butter, fresh fruit-whatever makes your heart happy.
