Holy moly. This might be one of the best desserts I’ve ever made. One of the struggles of making a s’more is getting the marshmallow to a perfect, crispy, golden brown texture that’s not too soft on the inside but isn’t burnt. And I may have mastered that today.
- 2 cups oats
- 1 1/4 cup flour
- 12 tbsp butter, softened
- 1 egg
- 1 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/4 cup milk
- 3/4 cup chocolate chips
- Giant marshmallows
Mix oatmeal, flour, butter, egg, brown sugar, baking soda, salt, vanilla extract and milk in bowl.
Beat until dough holds together.
Add in chocolate chips.
Bake at 350 °F for 20-25 minutes. (Baking time may vary based on baking pan used)
After cooking for about 12 to 15 minutes, add marshmallow on top of bar and place back into oven.
Optional: top with toasted coconut chips! SO AMAZING. These coconut chips have become my new obsession, and if you don’t like coconut, these may possibly change your mind.
And of course, Stephanie and I had to make a bigger bowl for ourselves, and these are the ones that contain our perfectly roasted marshmallows. And by perfect, I literally mean perfect.
