Well, isn’t this just the prettiest bowl of food you’ve ever seen? There is no secret behind whipping up such a beautiful meal-all it takes is a couple of fresh fruits and vegetables, and voilà! A masterpiece before your very own eyes that takes less than 10 minutes to prepare and put together. I love that this is so simple, fresh and colorful, it actually makes you want to eat it. Because let’s be real, it can be a struggle to eat your vegetables sometimes. Here’s my SUPER simple recipe for a quick meal!
- 1/4 cup quinoa
- cucumber, skinned and chopped
- tomato, chopped
- mango, chopped
- red onion, chopped
- avocado, cubed
- bell peppers, chopped
- garbanzo beans
- 2 stalks celery, skinned and chopped
- 1 lemon
- garlic powder
- crushed red pepper
- ground black pepper
Boil quinoa in water, done when seeds have sprouted.
Mix together fresh vegetables in bowl.
Add in drained quinoa.
Squeeze juice of one lemon.
Add in garlic powder, crushed red chili and black pepper to taste.
Combine well and serve immediately.
The thing I love about this recipe is that I literally just put together whatever I had in my fridge, chopped it all up and mixed it all together. This recipe is very flexible-swap out any veggies or fruits that you want to add instead if you don’t have these ones on hand.
Packed with protein and tons of healthy vitamins and fiber and what not from all the vegetables!
This is literally a feast for your eyes AND stomach.
