If you’re anything like me, you probably like to take your time in the morning getting ready, which means that by the time that you’re done getting ready, it’s already time to get to class. Or you’re probably already late to class, haha. This usually results in me having to run to the market to get a yogurt or muffin and eat it as I scramble to class. So on mornings where I have time to sleep in, wake up feeling refreshed and make a delicious breakfast, I get very excited. I was originally planning to just make a simple French toast breakfast, but it turned out to be more like a gourmet French toast, so I thought I’d share it with you all.
- 2 eggs
- 1/2 cup almond milk
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- Pinch of salt
- 2-3 slices bread
- Oil, for frying
- Gelato/ice cream
- Fresh fruit
Whisk eggs, almond milk, vanilla, cinnamon and salt.
Dip bread until both sides are coated evenly.
Heat oil over medium heat and cook until both sides are cooked.
Sprinkle lightly with cinnamon and drizzle honey over bread slices.
Serve with ice cream and fresh fruit. (Optional, but this makes all the difference!)
