Remember that potato gnocchi I made a while ago? As I was browsing through gnocchi recipes online today, I stumbled across this amazingly splendid gnocchi recipe that may have just changed my life. There’s something about crispy, crunchy foods that makes my mouth water like crazy, whether it’s crispy sweet potato fries, crunchy rice from Korean BBQ, mochi pizza, potstickers…you get the point. So you can imagine how excited I was when I discovered that crispy gnocchi was a thing. I bought a package of pre-made gnocchi a couple of days ago thinking that it would come in handy for a college student like me, especially on days like today where I don’t want to spend too much time preparing my dinner. Preparing this dish takes a total of 10 minutes, and I’m not exaggerating when I say that this is now one of my favorite meals of all time.
- Pesto sauce
- Olive oil
- Cheese (optional)
Cook gnocchi according to package instructions and drain.
Heat olive oil in skillet and add minced garlic.
Add gnocchi in single layer on olive oil.
Stir occasionally, until golden brown on both sides.
Remove from heat and add pesto sauce .
Top with cheese, and enjoy!
