Good morning! I had this sudden urge to make crepes this morning with my roommates and it just brought back feelings of nostalgia from the summer…oh, how I miss summer. There are a lot of things I miss, I guess I just don’t realize it as much since I truly love my time at college. But there are certain times when I just start thinking about home and family and friends and I catch myself choking up a little bit. Of the many things I miss, I definitely miss my dad’s cooking and being able to make my own food whenever I feel like it. And actually making good food. Considering the fact that making my own food in college is a lot more difficult without my own kitchen and all the ingredients on hand, I would say that I did pretty good…but these crepes are definitely way better than the ones I made today. Give it a try!
- 3 tsp butter, divided
- 1/3 cup milk
- 3 tbs flour
- 1 egg
- 2 tsp sugar
- 1/8 ground cinnamon
Melt 2 tsp butter and let cool.
Mix milk, flour, egg, sugar, cinnamon and melted butter in bowl.
Brush nonstick skillet with a little of the remaining butter.
Heat pan over medium-high heat.
DIstribute batter evenly by lifting pan off heat, cook until edges are golden.
Add toppings and serve.
This is one big crepe…
I added peaches, bananas, condensed milk and some granola mix on this one!

I have 8 am classes everyday so it does get kind of tiring sometimes…but coming home to this? It makes my day all better. I even made these for my friend’s birthday today and brought it over to his dorm-I think it’s safe to say that he was very happy with the surprise and even happier with the fact that he could get a break from dining hall food. Or maybe my crepes were just that bomb. Hahaha, guess I’ll never know!
