Have you ever tried the blueberry muffins from Souplantation? I swear I could probably have one of those blueberry muffins for breakfast for the rest of my life and I would die happily. I decided to make my own blueberry muffins on one of those nights where I didn’t feel like doing homework and decided that baking with Stephanie would be a better substitute. I stumbled upon this recipe in my feed, and I was actually looking forward to making strawberry muffins and making use of my big bag of oatmeal, but to my dismay, our market was out of strawberries. Thankfully, my mom had actually sent me some fresh blueberries, and this beautiful blueberry muffin was the result!
- 1 cup oatmeal
- 3/4 cup milk
- 1/2 cup brown sugar
- 1/4 cup canola oil
- 1 egg
- 3/4 cup flour
- 1 1/2 tsp. baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Mix oatmeal, milk, brown sugar, oil and egg.
Stir in flour, baking powder, salt, cinnamon and vanilla.
Gently fold in blueberries.
Bake at 400 °F for 18-22 minutes.
The fact that these muffins contain oatmeal makes it a healthier option! I also put less sugar than the recipe called for, so it was also low sugar. Instead of 1/2 cup of brown sugar, I put between 1/3 and 1/4 cup of brown sugar. Hehehe, I know my parents would have liked these muffins because they’re not too sweet.
Fresh blueberries in every bite.
I topped some of the muffins with some powdered sugar for those who prefer to have a little more sugar! Just a sprinkle will suffice.
Mhhmm..these muffins make a great breakfast treat!
