The weather’s been getting hotter, and that means it’s time for a large bowl of ice cream, a day at the beach, crop tops, and getting fit for that bikini body. For some reason, I really neglected my health during winter quarter, and now I’m making a conscious effort to watch my diet and stop snacking so excessively and limiting the amount of ice cream I’m always eating ($1 a scoop…I mean, come on, that’s a good deal). I recently discovered this new healthy and vegan recipe on Instagram, and it’s one of the best inventions ever, seriously. And all it needs is 2 bananas. (Are you serious, Joleen?) Yes I’m serious. Whoo.
- 2 frozen bananas
Blend until you reach thick consistency.
Serve immediately or put in the freezer overnight for a harder, more ice cream like texture.
For more variation, you can blend the frozen bananas with other frozen fruits, such as strawberries, blueberries, avocadoes, cherries, or you can add peanut butter or basically anything that makes your heart happy.
