Welcome back to yet another recipe showcasing my matcha madness. This recipe is so easy, and SO good, you’ll go bananas over it. Literally. I’m not kidding, what looks like matcha ice cream is actually just a couple of frozen bananas mixed in with some high-quality matcha powder, and that, my friends, is what you’re looking at right now.
I almost feel like a magician typing that out. As if this is some magic trick or something, haha. But in reality, I’m just really excited about the fact that this was waiting for me at home in the freezer after coming back from another long day of classes.
Living on campus used to be so great-my roommates and I would somehow always mindlessly make a trip to the market, pick up our favorite ice cream and guacamole ingredients, and just end our day of classes enjoying all of the snacks at home. No wonder Freshman 15 continued through sophomore year. They even started selling Talenti gelato for a while in our markets, and they make some of the BEST flavors, plus they were really smooth and creamy. Personally, I always went for the green tea ice cream mochi but I guess that’s pretty obvious if you know how much I la-la-looooooveee matcha. Ok, enough of that.
ABRACADABRA here is my easy, vegan, low-calorie, matcha nice cream. Did I mention that it only requires TWO ingredients?
I’ve been reminiscing a lot about my adventures this past summer and just thinking about the special memories of what makes wanting to go to dental school so special for me, especially with the past mission that I went on. What you learn from your conversations with people, your interactions with the world around you, and the lessons and failures you have to go through when problems arise, especially when you’re completely out of your comfort zone- pushes you to a whole new level and might even make you aware of your potential and abilities you didn’t know you were capable of. Traveling and service are two of the things I’ve always been so passionate about, because there’s just so much growth and so much you learn outside of textbooks and a classroom. That being said, I don’t take being at a prestigious university for granted at all, and despite all the challenges and stress that comes along with finals and things like o-chem, around this time of the quarter (FINALS), I always like to remind myself that it’s a privilege to be attending school, taking finals and having access to so many of these educational opportunities.
Also, since I’m on the topic of school and traveling, I’m (semi-officially) traveling abroad this summer!! More to come on that later, but I just couldn’t contain my excitement. YAYYY!
Whew. Sorry about all that rambling. Sometimes when I get really fired up about something, I just keep on talking and forget where I was trying to even go with it. But I guess what I’m trying to say is that you should always find something every day that makes you passionate and happy, whether it’s baking, cooking, blogging, or just spending time with friends. Sometimes, it’s what keeps you sane. And honestly, hearing people talking about something they’re passionate about, whether it’s their new job, their dance team, their hobbies, or their dreams, is always so inspiring to me.
Also, I just love the texture of this “nice” cream. It’s creamy, and will definitely satisfy any of your cravings for ice cream without all of the calories. Top it off with some raspberries, or even some coconut chips (my FAVORITE).

- 2 bananas, sliced and frozen
- 1 tsp high quality matcha powder
- Blend frozen bananas and matcha powder in blender or food processor until smooth.
- Add any toppings of your choice.
- Serve immediately. Enjoy!
- You can use honey or syrup if you would like extra sweetness.
- For a creamier and thicker nice cream, place blended nice cream back into freezer and let chill for another hour before serving.
